We’ve teamed up with Lunchbox Doctor (Jenny Tschiesche) to bring some fantastic recipes to you. Perfect for busy aspiring sports stars. 

Digestive biscuits 

Ingredients

180g oats 
120g wholegrain flour 
2 1/2 tsp baking powder 
1/2 tsp salt 
115g butter at room temperature 
60g unrefined caster sugar 
4 tbsp milk 


Method
  1. Preheat the oven to 190°C. Whizz the oats in a food processor to a grainy powder
  2. Add the flour, salt and baking powder and stir or whizz on a low speed to combine
  3. Add the butter and combine until the mixture looks like breadcrumbs
  4. Add the sugar and milk and mix until you have a dough
  5. Roll the dough out on a floured surface. Cut out approximately 20 biscuits
  6. Lay on a baking sheet covered in greaseproof paper. Prick the biscuits with a fork twice and brush with water
  7. Bake for 15 minutes, until golden brown

Veg Boosted Beef Burgers 

Ingredients

250g minced beef 
½ medium carrot, finely grated 
½ medium courgette, finely grated 
½ clove garlic, finely grated 
20g flavoursome cheese, finely grated 
Handful fresh parsley, finely chopped 
2 heaped tsp oil 
Black pepper 
To serve: roasted sweet potato wedges 


Method

  1. Once you have finely grated the carrot, courgette and garlic squeeze as much water out of those as possible, ideally through a piece of muslin or a nut milk bag
  2. Meanwhile, finely chop the parsley
  3. Combine the grated vegetables, cheese, parsley and mince with a good twist of black pepper
  4. Make up 4 equal sized beef-burgers
  5. Grill under a medium heat, until cooked through
  6. Serve with roasted sweet potato chips
